For IOS Device users
If you’re an iOS user, you’re in luck, since all you need to do is go into Settings > Chat Settings > Advanced and set Last Seen Timestamp to Off.
For Android Device users
You won't be able to disable your last seen timestamp from the settings of your Android device like IOS device.
You will need a third party app called "Hide Whatsapp Status" to disable your last seen timestamp.

Hide WhatsApp Status is an application that allows you to send and read messages as well as chat with a WhatsApp contact without updating your status and connection.
But your Android device must be rooted before this App can work for you.
